TABLET

Ingredients.

3 ounces water.
2 pounds sugar.
2 ounces margarine.
2 tablespoons syrup.
1 small tin condensed milk. (sweetened)
Half teaspoon vanilla.

Directions.

Throw the whole lot into a pot and melt slowly on a moderate heat. Stir, when boiling keep mixing for about half an hour. This isn't a good time to stick your finger in and test it. Remove from heat then pour into a greased tin. When the boiling brown blob starts to cool down, you can mark lines in it for easier scoffing later.

When cold you should be able to snap into squares... largest pieces of course - are yours!

TREACLE PUDDING

Ingredients.

4 ounces softened butter.
4 ounces castor or granulated sugar.
4 ounces self raising flour.
4 tablespoons golden syrup.
2 eggs.
1 Pinch of salt.

Sauce.

4 tablespoons golden syrup.
2 tablespoons water.

Directions.

Brush a deep pudding tin with non stick material. Mix the butter and sugar together in a bowl until it is of a fine consistency. Mix the flour and salt, add the eggs one at a time, adding flour as you go along to prevent curdling. Add drops of milk if the mix is becoming too dry. Pour the syrup into the bottom of the bowl, then add the pudding mixture on top.

Cover the tin with some foil, preferrably buttered and bake at 375°F/190°C/Gas mark 5 for 35 to 40 minutes. Before dumping out the delicious dessert onto your best bone china plate, warm up some more syrup and pour it over the top.

It is truly delicious and you can add either custard or ice-cream, in amounts suitable to your expanding waistline.
