Ingredients.
2 ounces flour.
1 half pound mashed potatoes.
1 half ounce butter.
1 pinch salt.
Some milk to bind.
Directions.
Grease a frying pan. Mash the potatoes together with the butter and milk. Add the salt and a little of the flour, mixing until the dough is fairly firm. Sprinkle your work surface with flour then roll the dough to about one quarter inch in size. Using a 4 inch pastry cutter make as many circles as you can. You should get at least six.
Cook for a couple of minutes at medium heat until the underside is brown. Flip and do the other side. Serve whilst hot. Great with butter, syrup or jam. They are a perfect compliment to bacon and eggs... oh and dinna forget the cuppa tea!

Ingredients.
6 ounces stone-ground hard whole-wheat flour.
4 ounces unsalted butter.
2 ounces confectioners sugar. (called castor sugar in Scotland)
2 ounces whole rice flour.
Directions.
Cream the sugar and flour until smooth and well mixed. Sift the 2 flours together and add them to the butter sugar mix. Mix together thoroughly and place in a 8 inch pie plate or other small flat pan.
Pat it down firmly so there are no voids or cracks. Should fill the pan to 3/4 inches thick. Prick the surface with a fork. Bake in medium oven 350C/175F/Gas mark 4 for 30 minutes. Reduce heat to 325 degrees and cook another 30 minutes.
Cut into segments while warm, cool and enjoy with a cuppa tea. |
Ingredients.
8 Cups Water.
2 pound lamb with bone.
2 chopped onions.
1 cup diced celery.
1 cup diced carrots.
1 cup of pared, chopped turnip.
Half a teaspoon salt.
Quarter teaspoon pepper.
Quarter teaspoon rosemary.
Quarter cup barley.
Directions.
Fill large pot with 8 cups of water, then add the meat, onions, carrots, rosemary, salt and pepper. Place lid on pot and bring to boil. Once boiling reduce heat to simmer for 1 1/2 hours. Remove the meat and the bone. Remove excess fat from the soup then put the meat back in. Bring to boil once more, add barley. Simmer until the barley is soft.
Cool, get large plate and spoon, don't forget your bib... and enjoy a soup that will stick tae yer ribs. |

8 oz plain white flour.
2 tablespoons oil.
2 teaspoons bicarbonate of soda.
1 tablespoon castor sugar.
1 egg.
Milk to mix.
Large pinch of salt.
Directions.
Heat the pan and grease lightly. Mix the flour and bicarbonate of soda into a bowl, thena add the castor sugar, egg, oil and a little milk. Stir contents into the flour and add sufficient milk to make the mix firm but still able to pour.Drop spoonfuls of the mixture onto your hot pan and cook until bubbles appear on top. Flip over and repeat on the other side. How dark you wish to make them is up to you. Keep the finished pancakes between a dishtowel whilst you finish making the rest. This will keep them warm and increase their "butter melting" rating. Enjoy, bet you will never make enough! |
